Today Roxanne Snopek stopped by with a recipe for Mince-meat tarts!
**Q&A with Roxanne Snopek**
Brand new flannelette pajamas! I almost gave that up, thinking my girls had outgrown the tradition but boy, did they let me know they have not. This one, it seems is a keeper. So now I get some for me, too!
Our first daughter’s first Christmas happened when she was recovering from a nasty gastro-intestinal virus. Nasty. Burn-the-nursery nasty. Here’s how the timing went: she was fire-hose sick on Christmas Eve. We celebrated with our wan-looking little girl on Christmas day – I roasted Cornish game hens. It was just the three of us, after all. On Boxing Day, my husband and I learned that the virus was contagious. We spent the day rotating, bedroom, bathroom, cough, your-turn-to-throw-crackers-at-the-now-healthy-and-bored-toddler.
I’ve never eaten a Cornish game hen since.
Each year, when my husband and I look at each other on Christmas Eve and know that a) everything’s done and b) we still love each other.
I do not have sufficient self-esteem to share this information. Also, if I’ve given a sexy gift, it was probably by accident.
Pumpkin spice.
Apple cider.
Hodge-podge. It’s all about the sentiment behind the ornaments.
A little of both.
Definitely giving. Though I won’t complain if there’s a little something under the tree for me, too.

**Mince-meat tarts**
Message from Roxanne:
I use to be the pie-lady of the family. In fact, I baked everything from scratch, including all our bread. My pies were legendary, so naturally, my contribution to Christmas dinner was a dozen mince-meat tarts, an apple pie, a pumpkin pie and a lemon meringue pie. Then one day, I just lost my touch. Plus, I got busy and discovered frozen pie shells.
Desserts | Prep Time: a bit. | Cook Time: a bit more. | Serves: Me. And whoever else likes mincemeat is invited to share. |
Ingredients:
- One jar mincemeat.
- One package frozen pastry tart shells.
Directions:
- Preheat oven to HOT.
- Spoon mincemeat into tart shells.
- Bake until done.

I haven’t had a chance to read any books by Roxanne but I’m hoping to soon! My favorite holiday dessert recipe is for sugar cookies. Can’t have Christmas without them!
I haven’t gotten to read any of the Three River Ranch but I do have the first one in my TBR list. Looking forward to reading it!
