Today Hope Tarr stopped by with a recipe for Hope’s Healthy Hot Artichoke Dip!
**Q&A with Hope Tarr**
On Christmas Eve, we go out somewhere cozy for dinner, then bundle up and take a long walk to ooh and ah over the Christmas decorations. We sit up sipping eggnog until midnight so we can say “Merry Christmas!” before the holiday is so much as a minute old.
Last year my boyfriend’s mom slipped and broke her hip. In my apartment. On Christmas Day. We had the paramedics with us for more than two hours. I’m hopeful of having a less…eventful Christmas this year.
Confession: I have actually never stood under real mistletoe as Starr and Matt do in A CINDERELLA CHRISTMAS CAROL. I’ll have to try it this year and see what happens. 😉
A Christmas Carol definitely. I love that the Dickens’ classic tale is actually a ghost story!
Tough call but I have to say peppermint mocha
Egg nog and preferably well-spiked. 🙂
Themed but my boyfriend prefers hodgepodge so that’s usually what we go with.
Neither—I have a cat with an appetite for all things electrical. 🙂

**Hope’s Healthy Hot Artichoke Dip**
Message from Hope:
It has never once let me down. Never. Leftovers reheated in the microwave are just as delish.
- 1 can or jar of artichoke hearts (whole or quartered) packed in water
- 1 8 ox container of low fat sour cream
- 2 tablespoons of low fat mayonnaise
- 1 cup shredded Parmesan cheese
- 2 cups 2% shredded Mozzarella
- Tabasco Sauce to taste
Drain artichokes and mash with fork. In a medium to large mixing bowl, combine the artichokes with sour cream, mayonnaise, three quarters of the cheeses, and Tabasco Sauce. Mix and pour into an oven safe baking dish. Sprinkle remaining cheeses evenly on top. Bake on 375 degrees Fahrenheit for 30 minutes or until casserole is bubbling. Serve immediately with pita crisps, slices of French bread or your favorite snack crackers.
